Varietal Honey

Some honeys can candy within 6 months and other can take years. Candying is a sign of honey that is not over processed. IT IS NOT A SIGN THAT IT HAS GONE OFF!!!

  • Store your honey in a cupboard. Do not refrigerate honey. Cold temperatures hasten granulation/candying
  • If your ABD honey candies stand in warm water (<40 degrees), stir occasionally until liquid
  • You can use a microwave to warm the candied honey, just be careful not to over heat
  • If using candied honey in cooking, spoon out desired amount and the heat of the cooking will re-liquefy the honey
  • Using ABD’s Honey to substitute sugar, use 1/3 less honey. If the recipe asks for 1 cup of sugar, use 2/3 cup of honey

Creamed Honey

  • To make the creamed honey easy to spread, the warmer the honey gets the softer it gets
  • If creamed honey is subject to, to much heat it can turn back to liquid honey.
  • If the creamed honey is to soft put it back in the fridge and it will firm up
